We were recently in the grocery store and Metro, being the adorably impulsive grocery shopper that he is, grabbed a bag of tortellini and casually tossed it into the cart. I of course gave him the “huh?!” look and he responded with ” I love tortellini”.
And so tortellini has wiggled itself back into our life very casually. I tried it with just tomato sauce and thought “that’s boring” {plus WAY to much extra sauce leftover}. Then I made it with just butter and thought “that’s a little better”. Then THEN I added bacon and thought “yessssssssss”. This is exactly the sort of lunch I want in my life. It’s pretty, easy and can be eaten while I play video games. And yes – I’ve actually tested that out. Granted I was only doing daily crafting writs in ESO but STILL.
Now why lunch you might be asking. Fair question – I’m normally to lazy to make bacon later in the day. It’s really as simple as that! You could totally have this for dinner and pair it with a side salad or a veggie if you wanted! I’m also a fan of having this for lunch because I don’t get a carb coma later at night. Carb coma means I’m not gaming and that make me sad. SO eating this at lunch time means my body has plenty of time to process all these yummy, buttery carbs without the extra sleepiness that might be attached to eating it later in the day!
And yes, you can totally make this with any other tiny, cheesy pasta! But as the above story mentioned, this is Metro’s favorite. So we stick with it! I imagine this would be lovely with ravioli as well!
Also – as always, substitute what you need to in this recipe to make it fit your dietary restrictions! If you’re gluten free use gluten free tortellini, if you don’t like bacon use bits of sausage or chicken, etc, etc!

Bacon & Tortellini | Gluten Free Friendly!
Ingredients
- 13oz Tortellini {Gluten Free or with Gluten depending on your dietary needs!}!
- 6 Slices of your favorite bacon + a spoonful or two of bacon fat
- Salt to taste
- 1/4 unsalted peanuts {or your favorite nut}
Optional:
- Extra Cheese to Sprinkle on top
- Nutritional Yeast {around 1 tablespoon}
Instructions
- Get your favorite tortellini cooking pot on the stove with water, heating.
- When it looks like the water is a little over half way to being boiled, start cooking your bacon in your favorite bacon pan {I literally have a “bacon pan”}.
- When the water is boiled add in your tortellini and cook according to the instructions.
- While both the bacon and the tortellini are cooking you can get your nuts measured out and your butter melted {I use a small bowl and microwave for about 10 – 15 seconds}. When your bacon is done set it aside on a separate plate and let it cool for a minute or two. I then like to break it up into pieces.
- When the tortellini and bacon are done it’s time to assemble! Drain and put your tortellini back in the pot and add in your butter, spoonful of bacon fat, salt, bacon, and peanuts {or nut of choice}. You can also add in a tablespoon or so of Nutritional Yeast if that’s your thing!
- Mix it all together {carefully, tortellini is fragile}. Serve and enjoy!
Notes
- If you’re using a nut other than peanut I’d suggest chopping it up a little bit just so it’s easier to eat!
- If you like it spicy a small pinch of hot red pepper flakes would be amazing here!
