Hello my gorgeous friends! It’s Tuesday, which means it’s time for cookies. I mean really though it’s always time for cookies … but still! Cookies!
I wish I was one of those bloggers that could write you a beautiful flowery description why these are the bomb dot com when it comes to cookies but let’s be real. These are just a delightful vessel for chocolate. I mean sure we could just grab a handful of chocolate chips {which I do … all the time} but it doesn’t come with peanuts or maple syrup or butter. These do. Hence they win and are hitting the interwebz.
I’m actually really picky when it comes to cookies. I want first and foremost a chocolate vessel {duh}. Secondly, they can’t be too sweet – Metro HATES overly sweet cookies and I’m not a fan of them either. Thirdly they can’t be messy. I like a soft but it can hold its self together cookie. That way I can easily eat it and game if I want to without worrying about a million and 600 crumbs all over the place/my keyboard. And lastly they have to be easy + quick to make. I don’t want to spend a million hours in the kitchen making them, cleaning the dishes, and waiting for them to bake. The faster I can get to eating these and back to life the happier of a proverbial camper I’m going to be.
Is it still proverbial camper if I’m playing a camping and/or survival game? I’m playing Conan Exiles right now and it feels like I’m camping … so am I literal happier camper? Curious minds are curious about this I know, I KNOW.
And you’d think my must have list would be an easy order to fill — but it’s not. It’s really, really not. They’re all either too sweet, too crumbly or have a really weird texture. So on that note, let me introduce you to our cookie of the moment! I say “of the moment” because I’m bound to change my mind next month or something and come up with another ultimate cookie.
A Few Cookie Making Notes:
– I used a #70 cookie scoop to make these because we like smaller cookies. They bake better and a bit quicker and are also way easier to eat + game at the same time with. Also I can sneak one with my morning coffee and I don’t feel too guilty because of how cute and small they are!
– I used peanuts {dry roasted, unsalted} but if you don’t like peanuts you can really add any nut you like! I’d just suggest chopping them up to about the size of peanuts. Some good alternative are: walnuts, cashews, almonds, + pecans.
– If you’re eating a Paleo lifestyle and don’t do peanuts or butter you can like mentioned above substitute out the peanuts for a paleo friendly nut and you can substitute the butter out for melted coconut oil!
– DO NOT skimp on your maple syrup quality. Don’t put that imitation maple syrup wanna-be crap in these cookies. Use the good stuff! It’ll make a better cookie flavor + texture wise. Plus, it’s healthier for you. Also, maybe while you’re at it…toss the crap maple syrup? You’ll thank me the next time you have French Toast or waffles.
– You can use whatever chocolate chips you like – around here we use dark chocolate because well, it’s not overly sweet. But totally feel free to use your favorite brand/type!

Chocolate Chips Cookies | Gluten Free + Paleo
- Prep Time: 10 min
- Cook Time: 10-14 min
- Total Time: 25 min
Ingredients
- 1.5 cups Almond Flour
- 2 Eggs
- 1/4 cup melted butter
- 1/4 cup maple syrup
- 1/2 – 3/4 cup chocolate chips {or more!}
- 1/2 cup dry roasted, unsalted peanuts {or favorite nut}
- 1/4 tsp salt
- 1/2 tsp cinnamon
Instructions
- PreHeat your oven to 350 {F}
- In a large bowl add all your ingredients – making sure to sift your almond flour in to ensure there isn’t any clumps of almond flour and that it’s a fine, even constinacney.
- Mix everything well and using a cookie scoop or a spoon scoop cookies onto a parchment lined baking sheet.
- Pat the cookie dough down a little as these won’t spread out! I usually wet my fingers a little and press down on them.
- Bake in Oven for 10-14 minutes, until the edge are golden brown and the tops of the cookies are just starting to turn golden brown.
- Let cool and enjoy!
