
What’s this? An actual recipe/food blog post? Yes, yes it actually is. I confess I’ve waffled with coming back to food blogging on and off a lot the last year and finally decided I missed it — so here we are!
Now before you turn your nose up at this sandwich ’cause it seems “too simple” or something silly like that, let me just tell you that this is delicious, light and refreshing! Not to mention it’s one of Metro’s favorite sandwiches so as it starts to get warmer out I’m going to be making this a lot more.
Everything is pretty much optional except the cucumber — if you don’t like cheese don’t add it, if you want to use a bagel, English muffin, or some other kind of bread vessel for this sandwich go for it. If you don’t want to use the sandwich spread I made just use your favorite spread for sandwiches. The important take away from this is: Cucumbers are DELIGHTFUL on a sandwich and highly under appreciated.

Also! If you need more protein with your lunch or whenever you eat this adding in a few slices of turkey, ham, or something similar is a fantastic option! You can also serve this sandwich with pretty much anything — we normally do fruit {that we split with Puppers} and some kettle cooked chips if we’re feeling fancy!
Alright that’s enough of me talking your ear off — time to make this little beauty and get back to gaming!


Cucumber Sandwich
- Yield: 1 1x
Ingredients
- Cucumber, thinly sliced
- Slice of your favorite cheese {we used swiss}
- Bread of choice
- Favorite Sandwich Spread {or use my homemade one!}
Spread:
- 2 Tbsp Mayo
- 1 Tbsp stone ground mustard {or some other good quality mustard}
- 2–3 drops of honey
Instructions
- Make your sandwich spread if using either mine {or a different homemade one}! Add all the ingredients for the spread in a bowl together, mix well, taste test and adjust ingredients as needed!
— This makes EXTRA of the sandwich spread! I do that on purpose so I have it for a few days to use as needed! - We had these super cute little rolls for the sandwiches but you can use any bread! Add a slice of cheese to one side {we used swiss} and pop both slices into the toaster oven if you have one and lightly toast the bread for the sandwich until the cheese gets a smidge bit melty! If you don’t have a toaster oven you can instead toast the bread as normal, remove from toaster, add your cheese slice and cover it for a minute or so to allow the heat from the bread to melt the cheese a smidge!
- Apply your sandwich spread to one or both slices of bread — use as much or as little as you’d like!
- Slice your cucmbers thinly and use as much as you’d like on your sandwich — normally for 2 sandwiches we use about half a cucumber!
- Serve and enjoy!
