So true story, I started writing this like a typical food blogging post with lots of exclamation points and promises that this is easy and budget friendly. But then I figured, heck with that — I just want to talk to you guys about Rosemary Roasted Potatoes like I would in either discord or on stream. So let’s do this yea? Yes!
Rosemary Roasted Potatoes are easy to make and they can totally be weeknight friendly depending on what kind of potatoes you buy – but my favorite part about them is it’s literally: Chop, chop, season, roast, eat. And they can be paired with pretty much anything. But it’s especially good with either chicken or a really fast stir fry!
Here are some notes on Roasting Potatoes:
- I used a Yukon Gold Potatoes because they were on sale. But you can use whatever you like! If you have access to the smaller round potatoes those also roast up really well!
- If you don’t like rosemary … don’t use it! Use whatever favorite herb you have on hand! Tarragon, Sage, Thyme, Basil even Oregano would be awesome on this.
- I didn’t use pepper or garlic on purpose in mine so Puppers could have herself a small sampling of potatoes. If you aren’t making these with your pet in mind, totally add in pepper or garlic or both!
- Don’t use crap oil – seriously, DON’T. I will come over and toss it in the bin and then drag you to the grocery store and help you find a good one! Use a good Olive Oil because that’s what is partially going to flavor your potatoes and if you flavor them with crap oil, you shall get a slightly crappy tasting potato!
- Don’t be afraid to make extra! It’s easier to make yourself a double batch of these, then have them for breakfast or lunch the next day then it is to regret not having some the following day. Yes? YES.
Also as we’re best friends and I hate dishes just as much as you do tip – you can totally line your pan with parchment paper so you don’t have to wash your pan after. I didn’t for photo reasons but normally I do!

Easy Rosemary Roasted Potatoes
Ingredients
- 2–3 Large Potatoes {I used Yukon Gold}
- Olive Oil
- Rosemary {I used dried, but you could use fresh}
- Salt
Optional: Pepper + Other Seasonings of your choice
Instructions
- Heat your oven to 400 {F}
- Wash your potatoes and chop them into your desired size preference – we like smaller pieces around here
- Toss them into a bowl and sprinkle on a medium-ish drizzle of a good Olive Oil {I’d say anywhere from 1-2 tablespoons depending on how much you’re making}
- Add in a healthy sprinkling of both salt + rosemary and toss it all together until combine well.
- Spread evenly onto a large sheet pan and bake for 30-45 minutes or until your potatoes are done to your desired level of roasted.
- Serve and enjoy!
